That means we do things like:
- buy local meat, eggs, dairy, produce, and bread.
- make all our own condiments including ketchup, mustard, and hot sauce.
- feature beers and spirits made and grown by local farmers.
- playfully experiment with flavors and honor the honest goodness of making things by hand.
It means emphasizing the richness of our local foodways in Central Illinois while attending to the global possibilities of our historical moment. And having fun while doing it.
