we aim to deliver a dynamic and irreverent dining experience with passion and intentionality.
That means we do things like:
- buy whole animals from local farms and dry-age the meat in-house
- make all our own condiments including ketchup, mustard, and hot sauce
- feature local beers and spirits
- put caviar on housemade hot dogs
- keep Malört on tap and Mickey's 40ozs in the fridge to wash down those hot dogs
It means emphasizing the richness of our local foodways in Central Illinois while attending to the global possibilities of our historical moment. And having fun while doing it.
